Happy New Year!

Black-eyed pea soup...

Happy new year to all! A Southern tradition dating back to the American Civil War, black-eyed peas are thought to bring prosperity to those who eat them on New Year’s Day. So here is my new favorite recipe for a heart warming soup to bring in the new year…cheers…

1 pound lean turkey breast ground
1 small finely chopped onion
1 pound Polish sausage, cut into bite-size pieces
2 (15 oz.) cans black-eyed peas with jalapaneos, drained and rinsed
1 (14 oz.) can reduced sodium chicken broth
1 (14 oz.) can diced tomatoes, undrained
1 (10 oz.) can rotel, diced tomatoes & green chiles, hot
2 fresh, jalapaneos, seeded & chopped
2 cups water

1. Place a dutch oven over med. high heat. Add turkey and onions and cook till turkey is crumbly. Stir frequently!
2. Add remaining ingredients and bring to boil, Reduce heat & cover tightly. Simmer for 45 minutes. Stir 2 or 3 times.
3. Refrigerate several hours to blend flavors. Reheat and Enjoy!
